Ingredients to make prawn croquettes:

- 500 gr of prawns
- 1 glass of cognac
- 1 onion
- 1 red bell pepper
- 2 cloves of garlic
- 1 liter of milk
- 100 grams of butter
- 80 grams of flour
- Ketchup
- Flour
- I beaten egg
- Bread crumbs
- Salt
- Oil
How to make Prawn Croquettes:
Melt the butter and add the flour. Stir and add the milk little by little so that it binds and no lumps form. Chop the garlic clove and brown it in a pan with oil. Add the onion and the pepper, all very finely chopped, and when it is well poached, add the diced prawns. Sauté and add the glass of cognac, flambé and add everything to the béchamel. Season with salt and cook over low heat for about 30 or 40 minutes, stirring constantly. Add half a glass of tomato sauce and mix. Put the dough in a bowl to cool down by passing a little butter over the dough so that it does not crust. Let the dough cool in the refrigerator.
Form the croquettes, pass them through the flour, egg and breadcrumbs and fry them in hot oil. Serve with the tomato sauce.
