Shrimp and noodle soup recipe

Ingredients to make Prawn Noodle Soup:

  • 1/4 kilo of spinach leaves
  • 1/2 kilo of noodles
  • 1/2 kilo of cooked prawns
  • 1 tablespoon of oil
  • 1 large onion chopped
  • 1 piece of grated ginger
  • 2 finely chopped red chilliest
  • 1 liter of chicken broth
  • 2 tablespoons soy sauce
  • 2 teaspoons of brown sugar
  • 4 chopped spring onions
  • 2 tablespoons of fried garlic
  • 2 tablespoons of fried onion
  • 150 grams of bean sprouts without the tips
  • 2 teaspoons chilli flakes
  • 1 tablespoon minced garlic cloves

How to make Prawn Noodle Soup:

  1. Peel the prawns.
  2. Wash and drain the spinach and remove the long stems.
  3. Put the noodles in boiling water and leave for 3 minutes until they thicken and soften.
  4. Heat the oil in a saucepan and fry the onion and ginger over medium heat for 8 minutes, stirring regularly.
  5. Add the chili with the broth, the soy sauce and the sugar bringing it to a boil – Reduce the heat and let it boil slowly for 15 minutes.
  6. Add the spring onion.
  7. Transfer the noodles to large bowls and top with the prawns and spinach leaves.
  8. Pour in the boiling broth and serve immediately.
  9. Arrange the dressings in small containers in the center of the table, along with the salt, pepper and sugar.
