Shrimp and Chicken Paella Recipe

Ingredients to make Shrimp and Chicken Paella:

  • 500 gr. of rice
  • 1/2 chicken in pieces
  • 250 gr. shrimp
  • 1 clove garlic
  • 1 ñora or chorizo ​​pepper
  • Salt
  • 1 onion
  • 1 carrot

How to make Shrimp and Chicken Paella:

  1. Place the chicken in a pot with cold water, salt, onion and carrot, bring to a boil and cook for 40 minutes.
  2. Clean and put the shrimp in a colander over the pot where the chicken is so that they soften a bit.
  3. Peel the shrimp and add the heads and shell to the chicken broth.
  4. After 40 minutes, remove the chicken, let cool and bone, add the bones to the broth and cook for another 10 minutes.
  5. Strain the broth and reserve 1 liter in the heat. Heat the oil in a pan, brown the garlic and the minced and seedless ñora, remove from the oil and mash in a pan with a little broth.
  6. In the same oil, sauté the chicken meat, shrimp and rice.
  7. Put the ñora and garlic in a strainer or Chinese and pour the broth through the strainer, mashing so that the ñora releases all the substance and color.
  8. Count 20 minutes when it starts to boil and reduce the heat to medium cooking. After this time, remove the paella pan from the heat, cover with a cloth and let it rest for a few minutes before serving.
