Ingredients to make Shrimp and Chicken Paella:
- 500 gr. of rice
- 1/2 chicken in pieces
- 250 gr. shrimp
- 1 clove garlic
- 1 ñora or chorizo pepper
- Salt
- 1 onion
- 1 carrot
How to make Shrimp and Chicken Paella:
- Place the chicken in a pot with cold water, salt, onion and carrot, bring to a boil and cook for 40 minutes.
- Clean and put the shrimp in a colander over the pot where the chicken is so that they soften a bit.
- Peel the shrimp and add the heads and shell to the chicken broth.
- After 40 minutes, remove the chicken, let cool and bone, add the bones to the broth and cook for another 10 minutes.
- Strain the broth and reserve 1 liter in the heat. Heat the oil in a pan, brown the garlic and the minced and seedless ñora, remove from the oil and mash in a pan with a little broth.
- In the same oil, sauté the chicken meat, shrimp and rice.
- Put the ñora and garlic in a strainer or Chinese and pour the broth through the strainer, mashing so that the ñora releases all the substance and color.
- Count 20 minutes when it starts to boil and reduce the heat to medium cooking. After this time, remove the paella pan from the heat, cover with a cloth and let it rest for a few minutes before serving.
