Shredded Chicken Sandwich Recipe

Today I will show you a fantastic recipe for using leftover chicken, it is a delicious shredded chicken sandwich that you can eat for lunch or dinner and that is finger licking good.

In this case I have used roast chicken, so in theory it is a roast chicken sandwich, but you can make it with any kind of leftover chicken, whether it is grilled, fried or even boiled from a soup.

The ingredients that complete our super dish are cheese, avocado, tomatoes and a touch of mayonnaise, nothing can go wrong mixing all that, so do not hesitate and check this recipe thoroughly because I assure you that it will serve you when you least expect it.

Whether you feel like cooking or not, because the chicken sandwich that we are about to prepare will be ready in less than 10 minutes, so put on your apron and get cooking!

Ingredients to make Shredded Chicken Sandwich:

  • ½ Grilled Chicken Breast (Leftover Chicken)
  • 2 slices of cheese
  • ½ avocado
  • 1 tablespoon of Mayonnaise
  • 4 handfuls of cherry tomatoes
  • 1 pinch of freshly ground pepper
  • 1 pinch of salt
  • 3 slices of sliced ​​bread

How to make Shredded Chicken Sandwich:

To make this grilled chicken sandwich, it is best to have leftover chicken, whatever it is or grilled chicken, stew, even fried chicken. In any case, what you should do is shred the chicken as thinly as possible and sauté it a bit in the pan to heat it up. If you have fresh chicken, then you can make a simple grilled chicken. Before removing the chicken from the pan, cut the cherry tomatoes in half and mix them with the shredded chicken. The idea is that they warm up and roast a little. To make our three-tier sandwich, we start by spreading mayonnaise on one of the slices of bread. Then we place the cheese and the avocado cut into strips. Season with a pinch of salt and pepper.

I have used whole wheat bread but you can use any type of bread to make our pulled chicken sandwich. As for the mayonnaise, you can use homemade mayonnaise or an avocado mayonnaise. Then we add the roasted chicken with tomatoes, add a good portion trying not to fall over the sides, so it is best to shred the chicken very well. To finish assembling the chicken and mayonnaise sandwich we repeat the operation. That is, we put another layer of bread, mayonnaise, cheese and chicken. I have preferred to place avocado only in the first layer, but this is to taste.

Put the lid on and voila, take a big bite out of your shredded chicken sandwich! You can make this sandwich for lunch or dinner, it’s great and the best thing is that it’s a very original way to take advantage of leftover chicken.
