Short Broth Recipe

Ingredients to make Caldo Corto:

  • 9 ½ cups of water
  • 500 grams of carrots cut into slices
  • 2 onions, cut into slices
  • 1 teaspoon of fine herbs
  • 1 tablespoon of salt
  • 12 peppercorns
  • A bunch of parsley, coarsely chopped
  • 2/3 cup wine vinegar

How to make Caldo Corto:

  1. Whole or large pieces of fish and shellfish are usually cooked in a seasoned liquid, known as a short broth.
  2. This broth is prepared and allowed to cool before use.
  3. Can be strained and used multiple times if refrigerated.
  4. Put all the ingredients in a large pot and cook over low heat for 45 minutes
  5. Strain and chill the liquid.
