Ingredients to make Caldo Corto:
- 9 ½ cups of water
- 500 grams of carrots cut into slices
- 2 onions, cut into slices
- 1 teaspoon of fine herbs
- 1 tablespoon of salt
- 12 peppercorns
- A bunch of parsley, coarsely chopped
- 2/3 cup wine vinegar
How to make Caldo Corto:
- Whole or large pieces of fish and shellfish are usually cooked in a seasoned liquid, known as a short broth.
- This broth is prepared and allowed to cool before use.
- Can be strained and used multiple times if refrigerated.
- Put all the ingredients in a large pot and cook over low heat for 45 minutes
- Strain and chill the liquid.
