Sherry consommé recipe with veal

Ingredients to make Consume al sherry with veal:

  • 300 grams of beef
  • 1/2 hen
  • 1 onion
  • 1 stick of celery
  • 1 carrot
  • 1 veal bone
  • 1 white salted pork bone
  • 1/2 glass of fine sherry wine
  • 2 boiled eggs
  • 2 egg whites
  • 100 grams of quality Serrano ham
  • black peppercorns
  • Salt

How to make Consume al sherry with veal:

  1. We put a saucepan on the fire and add the bone, the veal meat, the chicken meat, the peeled carrot and cut into two or three pieces, the clean and cut celery, the peeled and cut onion, some peppercorns and the Salt.
  2. Cover everything with plenty of cold water.
  3. We keep the pot uncovered and when it starts to boil, lower the heat and let it simmer for about 3 hours, skimming from time to time.
  4. When the broth is done, remove it from the heat and pass it through a fine strainer.
  5. Put the strained broth in the refrigerator for a few hours.
  6. We remove the cold broth from the refrigerator and remove the fat that has accumulated on the surface.
  7. We put in a saucepan on the fire and add two beaten egg whites.
  8. Mix well with a wire whisk while it heats up.
  9. When it starts to boil, we remove it from the heat, remove all the foam with a slotted spoon and strain the broth through a damp cloth, placed on a fine strainer.
  10. We rectify salt.
  11. Accompanied by some cubes of quality Serrano ham, grated boiled egg and some pieces of fried bread.
  12. This garnish is served on separate trays, so that the diner can serve himself as he wishes.
