Ingredients to make Consome al sherry:
- 300 grams of beef.
- 1/2 hen.
- 1 onion.
- 1 stick of celery.
- 1 carrot.
- 1 beef bone.
- 1 white salted pork bone.
- 1/2 glass of fine wine from Jerez
- 2 boiled eggs.
- 2 egg whites.
- 50 grams of ham, cut into cubes.
- 2 slices of bread.
- Black peppercorns.
How to make Sherry Consomme:
- Put a pot on the fire and add the bone, the veal, the chicken, the carrot, peeled and cut into two or three pieces, the celery, cleaned and cut, the onion, peeled and cut in two, a few grains of pepper and the salt.
- Cover everything with plenty of cold water.
- Keep the pot uncovered and when it starts to boil, lower the heat and let it simmer for about three hours, skimming from time to time.
- When the broth is done, remove from the heat and strain the broth through a fine strainer.
- Put the strained broth in the refrigerator for a few hours.
- Remove the cold broth from the refrigerator and remove the fat that will have accumulated on the surface.
- Put it in a saucepan and add two beaten egg whites.
- Mix well with a wire whisk while it heats up, when it starts to boil, remove from the heat, remove all the foam with a slotted spoon and strain the broth through a damp cloth, placed over a fine strainer.
- Adjust salt.
- Heat a frying pan with a little oil and fry the bread, cut into small cubes.
