Unlike the famous potato gnocchi, semolina gnocchi have a different appearance and consistency. As there are no potatoes among its ingredients, its texture is less consistent but its flavor is unmatched.

Ingredients to make semolina gnocchi:

  1. 1 liter of milk
  2. 250 grams of semolina
  3. 50 grams of butter
  4. 200 grams of Parmesan cheese
  5. 3 egg yolks
  6. 1 pinch of nutmeg
  7. 1 pinch of salt and pepper

How to make semolina gnocchi:

  • Boil the milk in a saucepan and when it starts to boil add the semolina stirring with a spoon so it doesn’t clump. Do this for about 25 minutes on medium-low heat. Try to incorporate the semolina little by little and in the form of rain to prevent lumps from forming.
  • Remove the saucepan from the heat and add half of the butter, the egg yolks and 150 grams of cheese. Mix these ingredients well until they are fully incorporated into the semolina gnocchi batter. Take advantage and season the mixture to taste with salt and pepper.
  • Lightly grease the work table and dump the dough on top. Knead and stretch it with the help of a roller until you get a sheet one centimeter Reserve it until it cools to room temperature.
  • After the resting time, cut the dough with a mold to make the homemade semolina gnocchi in the way you like best.
  • Arrange the gnocchi, one next to the other, on a previously greased baking tray and place small pieces of butter on top. Also add the rest of the Parmesan cheese.
  • Finish cooking the semolina gnocchi in the oven at 180ºC until gratin.
  • You can enjoy these rich semolina gnocchi by adding a little béchamel sauce before putting them in the oven and with any other traditional sauce, such as a three cheese sauce.
