Seafood Fideua Recipe

Fideuá, a traditional recipe very similar to paella but instead of rice it is made with noodles. To make the original fideuá it is necessary to use thin noodles, which can be of various sizes depending on the dish we are making. On this occasion, we have used nº 2 thin noodles, but the recipe could also be made with nº 1 noodles.

Ingredients to make Seafood Fideua:

  1. 400 grams of No. 2 noodles
  2. 8 prawns
  3. 1 handful of peeled prawns (they can be frozen)
  4. 1 cuttlefish
  5. 300 grams of mussels
  6. 200 grams of crushed tomato or 2 tomatoes
  7. 2 garlic cloves
  8. 2 tablespoons dried tomato
  9. 1 small glass of olive oil

for the brother

  1. 1 bag of fresh fish bones
  2. 4 shrimp shells (optional)
  3. 2 garlic cloves
  4. 2 tablespoons of chorizo ​​or Nora pepper
  5. 4 strands of saffron
  6. 1½ liters of water
  7. 1 handful of salt

for the aioli

  1. 1 small glass of sunflower oil
  2. 1 egg
  3. 1 clove garlic
  4. 1 pinch of salt

How to make Seafood Fideua:

  • Start preparing the fish brother. To do this, put a liter and a half of water in a pot, add the fish bones (rooster, hake, monkfish…, whatever you have), add the shells and heads of the prawns if you want to enhance the flavor, add 2 peeled garlic cloves, 2 tablespoons of chorizo ​​pepper meat, a few strands of saffron and a little salt. Stir everything and let it cook for about 20 minutes from when it starts to boil. Booking.

  • Apart, cook the mussels with a small glass of water. When they are done, strain the broth and add it to the previous pot to get an even tastier broth for fideuá.
  • Spread the base of the peeler with a little oil and heat it over medium heat. Add half of the noodles, brown them carefully so they don’t burn, take them out and add the other halfof the noodles to do the same. Reserve all the noodles to continue with the original fideuá recipe.
  • Prepare the seafood by washing the prawns, cleaning the cuttlefish and cutting it into small pieces. Frozen shrimp will need to be thawed completely. If you only use fresh prawns, remember that you can peel half to use the shells and heads for the brther that you have on the stove.
  • Heat the paella again over medium heat with a drizzle of oil to sauté the prawns in their shells. Simply cook them back and forth and remove.
  • Sauté the cutlet fish for a few seconds and place it on one side of the paella so that it cooks slowly. Add the 2 minced garlic cloves and, when they start to brown, add the crushed tomato and the fried tomato, stir and cook for a few minutes.
  • Stir the sauce from the fideuá to integrate the cuttlefish into the tomato, add the toasted noodles again and mix well.
  • Pour in the fish broth(having previously strained it to remove bones and shells) so that it completely covers the noodles and a little more. Raise the heat and when it starts to boil, lower it again to cook the seafood fideuá over medium heat. Taste for salt and rectify if necessary.
  • After about 10 minutes, add the shelled and peeled prawns and let the fideuá finish cooking. It should be dry, although if you prefer to make broth seafood fideuá, all you have to do is add a little more broth or water.
  • When you see that there is almost no broth left, add the already cooked mussels, turn off the heat and let it rest. We recommend covering the fideuá with sheets of newspaper.
  • To know when the seafood fideuá is ready, you should look at the noodles. As the brother dries up, the noodles begin to soften, that is when the heat is turned off and left to rest.
  • The traditional fideuá is usually served with aioli. You can buy it already made or make it homemade with an electric hand mixer. You simply have to beat all the ingredients until the oil emulsifies and the sauce is formed..
