Seafood Broth Recipe

Ingredients to make Seafood Broth:

  • 1/2 pc. lobster tail
  • 1 pc. lobster
  • 1 pc. whole shrimp
  • 2 u. a grain of corn
  • 1kg pumpkin flower
  • 250ml clarified consommé
  • 1 pinch piquín chilies
  • 1 tablespoon olive oil
  • FOR THE BROTH
  • 2 u. carrot
  • 1 stick of celery
  • 1/2 pc. onion
  • 1 pc. Jamaica
  • 1kg lean chicken breast
  • 3 u. egg white
  • 1 bay leaf
  • 2 u. black peppercorns
  • salt to taste

How to make Seafood Broth:

  1. Preparation: Sauté the shellfish in a frying pan with olive oil and season them with piquín chili, place it in the soup plate and add the corn kernels and the pumpkin flower.
  2. For the broth: Grind everything in a mill and add it to the hot but not boiling chicken broth.
  3. Finally let heat and strain with a chinois and sky blanket. SERVE AND EAT.
