Ingredients to make Seafood Broth:
- 1/2 pc. lobster tail
- 1 pc. lobster
- 1 pc. whole shrimp
- 2 u. a grain of corn
- 1kg pumpkin flower
- 250ml clarified consommé
- 1 pinch piquín chilies
- 1 tablespoon olive oil
- FOR THE BROTH
- 2 u. carrot
- 1 stick of celery
- 1/2 pc. onion
- 1 pc. Jamaica
- 1kg lean chicken breast
- 3 u. egg white
- 1 bay leaf
- 2 u. black peppercorns
- salt to taste
How to make Seafood Broth:
- Preparation: Sauté the shellfish in a frying pan with olive oil and season them with piquín chili, place it in the soup plate and add the corn kernels and the pumpkin flower.
- For the broth: Grind everything in a mill and add it to the hot but not boiling chicken broth.
- Finally let heat and strain with a chinois and sky blanket. SERVE AND EAT.
