Ingredients to make Paella with seafood and vegetables:

  1. ½ kilogram of rice
  2. 1 leek
  3. 1 green pepper
  4. 1 red pepper
  5. Seafood to taste
  6. ½ kilogram of squid rings
  7. 12 prawns
  8. ½ kilogram of Mussels (1 kilo if they are in shell)
  9. 700 grams of Clams
  10. 300 grams of peeled prawns
  11. Fish to taste (I have put scorpion fish)
  12. 1½ glasses of white wine
  13. 1 pinch of Coloring
  14. 1 pinch of salt
  15. 1 tablet of Averred fish (any brand will work)

How to make Paella with seafood and vegetables:

  • Previously we put to cook in a large casserole water with a tablet and a half of “averred” of fish. When it is hot, we add all the shellfish to the casserole, half a glass of white wine and leave it to cook for about 30 minutes. If you have bought fresh seafood, I recommend that you remove half of the shell from the mussels, as it takes up a lot of space.
  • Tip: Clams and mussels, if they are fresh and one is open or broken, throw it away before cooking.
  • Chop the vegetables to taste and when there are about 5 minutes left for the broth to be made, we put it in the paella pan, casserole, frying pan or whatever we are going to use to make the paella. When the vegetables are poached, add half a glass of white wine, remove the shellfish from the casserole and put it in the pan for a couple of minutes to release the flavor, add the rice and leave it for a while until the flavor is well established. Of the shellfish. Add the chopped fish.
  • Trick: You can add more vegetables to taste.
  • We are adding the seafood broth that we had previously strained in the casserole to avoid getting dirt that the seafood could leave. We add half a glass of white wine and the coloring to give it the typical yellow color of paella.
  • Now is to wait for the rice to taste and add salt. Finally, we let it rest for about 10 minutes and… To the table! I hope you liked the seafood paella.
