Ingredients to make sea soup:
- 1 tablespoon olive oil
- 2 leeks chopped
- 100 grams fennel or celery, chopped
- 3 garlic cloves minced
- Salt
- pepper to taste
- 1 L of broth or fish stock
- 100cc of white wine
- ½ Kg of tomatoes, peeled and seeded, with their juice
- 1 teaspoon dried thyme
- 2 bay leaf
- 12 clams
- ¼ kg of large shrimp
- ¼ Kg of Haddock
- fresh basil, chopped
How to make sea soup:
- In a large pot, heat the olive oil over moderate heat.
- Add leeks, fennel, garlic, salt and pepper and sauté, stirring occasionally, 3 to 5 minutes, or until leeks are softened.
- Add the broth, white wine, tomatoes, thyme, and bay leaves to the pot.
- Wait for it to boil, cover, lower the flame and let it simmer for 25 minutes.
- Add the clams, cover and boil for 5 minutes or until the clams open. (Throw out the ones that don’t.)
- Using a slotted spoon, transfer the clams to a bowl and cover with aluminum foil.
- Add shrimp to boil about 3 minutes or until cooked through; stir occasionally.
- Remove bay leaf.
- Serve the soup with 4 individual bowls and put 3 clams, add the basil.
- Serve this Italian-style fish soup with garlic bread.
