Sea bass in an Iberian crust with vegetable noodles

Ingredients to make Iberian crusted sea bass with vegetable noodles:

  • 2 sea bass of 600 gr. Each
  • 4 thin iberian bacon strips
  • Oil
  • Salt
  • For the garnish
  • 4 green beans
  • 1 car
  • 1 zucchini

How to make Iberian crusted sea bass with vegetable noodles:

  1. Ask the fishmonger to make 4 fillets with the 2 sea bass.
  2. Season the fillets.
  3. Spread the 4 strips of Iberian bacon on the table; place the sea bass on top, skin side up.
  4. Wrap the packed fillets on themselves, leaving the bacon on the outside. Hold with a toothpick and reserve.
  5. Clean the string beans, peel the carrots and wash the zucchini.
  6. Cut the beans in half and make 4 strips or noodles from each part, cut the carrot into slices and make noodles the same as the bean noodles.
  7. Do the same with the zucchini and we already have the so-called noodles.
  8. Put oil in a pan to sauté the vegetable noodles over high heat, not too long, they should be al dente.
  9. Put the sea bass fillets on a baking sheet, they should remain standing on the plate. Drizzle with a drizzle of olive oil and put in the oven for approximately 8/10 minutes.
  10. Take out the sea bass on a plate STANDING UP, and accompany with the noodles garnish, water with a jet of extra virgin olive oil and good profit.
