Scrambled Tofu with Vegetables Recipe

Ingredients to make Tofu Scramble with Vegetables:

  • 200 grams of tofu
  • 1 bunch of spinach
  • 1 bunch of Swiss chard
  • 2 cloves of garlic
  • ½ carrot
  • 1 onion
  • 1 piece of white cabbage
  • 1 piece of ginger (small)
  • 1 pinch of salt
  • 1 pinch of pepper
  • 2 tablespoons of oil

How to make Tofu Scramble with Vegetables:

1.Julienne the onion and cabbage, chop the garlic and ginger. Also cut the chard leaves into strips. Break the block of tofu into small pieces with your hands or mash it with a fork.

2.Heat a pan with oil and fry the onion, garlic and ginger. When the onion begins to turn transparent add the cabbage and carrot and cook the vegetables of the vegan tofu scramble for 2-3 minutes. Then add the spinach and Swiss chard leaves and cook for 1 more minute.

3.Add the tofu, salt and pepper to the pan and cook, stirring occasionally, for 5-7 minutes.

4.Serve the Tofu Vegetable Scramble with toast, salad, or more vegetables.
