• 2 units of Oranges

• 2 units of Tomatoes

• 200 grams of peas or peas

• 1 bunch of fresh spinach

• 1 pinch of sesame

• 1 unit of Avocado

• 1 branch of fresh parsley

• 1 teaspoon of butter

• 1 glass of white wine

• 1 teaspoon of garlic paste

• 1 pinch of salt

• 1 pinch of black pepper

How to make Scallops and Avocado Salad:

The first step to make the scallop salad recipe is to pre-list the ingredients. Remove the spinach leaves to a bowl and add water to clean them. Also add a tablespoon of vinegar or lemon juice to disinfect. Let soak for approximately 15 minutes. Remove the water and drain the spinach leaves. Separately, julienne the tomato. Peel the oranges and cut the segments, removing all the white part of the fruit.

Bring a deep pot of water to medium heat. When the water is about to boil, add the peas. Cook until they are at the desired doneness. Clean the scallops and if you want, cut a little so you don’t have such large pieces in the salad. Bring a skillet to medium heat and melt the butter. Sauté the scallops with salt, black pepper and garlic paste to taste. Remember not to overcook the seafood; about 5-8 minutes on the fire will be enough. Add the white wine, mix with the soffit and let it reduce. And this will give a really delicious touch to the recipe, turn off the heat and add the fresh parsley on top. Reserve and remember that it is a cold salad so the sauce must be cooled.

Apart, take the spinach leaves already cleaned and chopped by hand to a bowl. Add the avocado in small squares and the tomato in julienne strips. Mix well until the ingredients are integrated. Add the orange peels, which will give a citrus and fresh touch to this elegant salad that you can even serve for Christmas dinner.

When you have the main mixture ready, serve the salad in individual dishes and add the cold cooked peas. Finally and before serving, add the already cold scallop sauce to each dish and enjoy. You can decorate the scallop and avocado salad by sprinkling a little sesame and accompany it with coriander dressing or strawberry dressing.
