Ingredients to make Sautéed Chicken with Spiced Guacamole Sauce:
For the chicken
- 2 tablespoons lemon juice
- 1 tablespoon olive oil
- 1 clove garlic, minced or pressed
- 1 good pinch of chili powder
- 4 half breasts, without skin or bones
For the Guacamole sauce
- 2 ripe avocados
- 2 tablespoons lemon juice
- 2 tablespoons plain yogurt
- 2 ripe tomatoes in large pieces
- 3 finely chopped spring onions
- 1/2 teaspoon cumin powder
- 1/2 teaspoon chili powder
- 1 tablespoon chopped coriander
- Salt
How to make Sautéed Chicken with Spiced Guacamole Sauce:
To prepare the chicken Mix the lemon, oil, garlic and chili in a small jar with a lid. Close tightly and shake until ingredients are thoroughly mixed. Put the chicken in a bowl, add the marinade and cover the chicken with it. Leave at room temperature for half an hour, or a long hour in the refrigerator. To prepare the guacamole sauce, peel and pit the avocados, cut them into large cubes, add the lemon juice and mash with a fork. Add the yogurt and stir. Mix with the tomatoes, spring onions, spices and salt. Cover and keep in the fridge until serving time.
In a large nonstick skillet or casserole, cook chicken about 5 minutes on each side or until done. It is better that the chicken pieces are not very close to each other, so if it is necessary to keep some in the heat while you cook the rest. Serve the chicken with the guacamole sauce on top.
