Sausage and Turkey Gumbo Recipe

Ingredients to make Sausage and Turkey Gumbo:

  • 350 cc of oil
  • 3 minced garlic cloves
  • 75 grams of chopped celery
  • 2 cups of rice
  • 2 liters of broth
  • 150 grams of chopped onion
  • 1 cup chives
  • 175 grams of flour
  • 2 bay leaves
  • 400 grams of cooked chopped turkey
  • 1 pinch of pepper
  • 75 grams of chopped green pepper
  • 1 pinch of salt
  • 250 grams of smoked Vienna sausage

How to make Sausage and Turkey Gumbo:

  1. In a large pot, fry the flour with the oil over very low heat, stirring constantly until it turns brown, being very careful not to burn it.
  2. Add the onion, bell pepper, and celery and cook, stirring, for 4 minutes.
  3. Add the garlic and sausage, cook 5 minutes, until the sausage releases some of the fat.
  4. Add the bay leaves, salt, and pepper to taste, finally add the broth.
  5. Bring to a boil, reduce heat, and cook over very low heat for 1 hour.
  6. Add the turkey and cook slowly for another 30 minutes.
  7. Adjust seasoning and serve with hot cooked rice sprinkled generously with chopped spring onion.
