Sardines with potatoes recipe

Ingredients to make Sardines with potatoes:

  • 12 units of fresh Sardines
  • 150 grams of olive oil
  • 1 kilogram of potatoes
  • 75 grams of coarse salt
  • 1 head of garlic
  • 1 unit of onion
  • 3 bay leaves

How to make Sardines with potatoes:

  1. The sardine guts are removed and scaled. They are washed and sprinkled with plenty of coarse salt (approximately 75 grams).
  2. Reserve the sardines in the fridge for 24 hours, so that they absorb the salt.
  3. Peel the potatoes and cut into large pieces.
  4. Peel the onion and cut it in half. Clean the head of garlic.
  5. In a medium saucepan with plenty of water, add the potatoes, the three bay leaves, the head of garlic and the onion cut in half.
  6. Let everything boil over medium heat until the potatoes are almost cooked, at which time add the sardines (once washed) and 100 cc. of virgin olive oil and let everything cook for another five or six minutes.
  7. Drain the water, place it in a fountain, ensuring that the sardines remain whole and add the other 50 cc on top. Of remaining virgin olive oil and served.
  8. It is a cheap, delicious dish and above all a different way of eating sardines.
  9. Note: The dish will be better during the months from May to September, which is when the sardines are in season.
