Ingredients to make Sardines in oil:
- 300 ml of olive oil
- 12 white peppercorns
- 120 grams of salt
- 1 kilo of small sardines
- 4 sprigs of thyme
How to make Sardines in oil:
- Sprinkle the very fresh sardines abundantly with fine salt and soak t for 30 minutes.
- After this time, the scales are removed, the head, gills, and fins are removed and they are emptied inside.
- Salt again and leave another 30 minutes.
- Dry with a thin, absorbent cloth.
- They are placed in a strainer that is submerged in boiling oil, for one minute.
- Store in small jars, adding a few grains of white pepper and thyme and covering with boiling oil.
- It covers immediately.
- The sterilization is done for an hour and a half at 100º Celsius; you have to wait at least some time before consuming them, the sardines with oil, the older they are, the better they are.
