Sardines in oil recipe

Ingredients to make Sardines in oil:

  • 300 ml of olive oil
  • 12 white peppercorns
  • 120 grams of salt
  • 1 kilo of small sardines
  • 4 sprigs of thyme

How to make Sardines in oil:

  1. Sprinkle the very fresh sardines abundantly with fine salt and soak t for 30 minutes.
  2. After this time, the scales are removed, the head, gills, and fins are removed and they are emptied inside.
  3. Salt again and leave another 30 minutes.
  4. Dry with a thin, absorbent cloth.
  5. They are placed in a strainer that is submerged in boiling oil, for one minute.
  6. Store in small jars, adding a few grains of white pepper and thyme and covering with boiling oil.
  7. It covers immediately.
  8. The sterilization is done for an hour and a half at 100º Celsius; you have to wait at least some time before consuming them, the sardines with oil, the older they are, the better they are.
