Ingredients to make salty Humitas:
- 9 fresh corn (Elotes, cobs)
- 1 ½ onion chopped into small squares
- 3 tablespoons of butter or margarine
- 1 sprig of basil
- Salt
- ½ cup of milk
- Corn leaves
How to make salty Humitas:
Grate the corn or crush them in the processor, and then pass them through a sieve (strainer), to remove the pomace. Mix with the onion fried in butter. Add finely chopped basil, salt and milk. Slowly stir this preparation mixing the ingredients until you get a thick dough. Form the humitas, choosing healthy and tender leaves.
Wrap about two or three tablespoons of the mixture in each of them, joining two sheets, one overlapping the other, and making a package as if for a gift. Tie them with strips made with the same leaves, or if you prefer with cotton pita. Cook for 30-40 minutes in hot salted water, approximately 12 units are obtained. Serve with fresh tomato salad, with a few drops of oil, salt and onion cut into feathers.
