Salmorejo Recipe without Bread

The salmorejo recipe is a typical Andalusian dish that is originally prepared with tomatoes, garlic, bread, vinegar and olive oil. On this occasion, we have prepared a gluten-free salmorejo, removing the bread from the recipe and replacing it with cooked potato.

  2. 1 clove garlic
  3. 1 potato
  4. 1 pinch of salt
  5. 100 milliliters of olive oil
  6. 1 splash of white wine vinegar

  8. 2 tablespoons of chopped Serrano ham
  9. 1 unit of Egg

How to make Salmorejo without bread:

  • We gather all the ingredients to prepare the salmorejo without bread.
  • To start, we cook the peeled potato in plenty of boiling water. Let it cook for 12 minutes and when it is soft, take it out and let it cool. If you want the potato to cook before, you can cut it into small pieces.
  • Similarly, cook the egg in boiling water for 10 minutes. We pass it through cold water and remove the shell.
  • Peel the tomatoes, remove the central stem and chop them. Place the tomatoes in a mixing bowl. If you want, you can remove the seeds before blending, but we have preferred to strain the salmorejo once blended.
  • Add a clove of garlic, salt and a dash of vinegar. The amount of vinegar depends on taste.
  • It is time to add the cooked potato. We continue beating and add the olive oil little by little.
  • As we have said, the cooked potato is ideal for thickening soups and thus dispensing with bread.
  • Once this cold soup is finished, we strain the salmorejo without bread with the help of a strainer or chinos. In this way it will have a softer texture and we will not find any tomato seeds.
