Salmon Stuffed Mushrooms Recipe

  • 9 large mushrooms
  • Smoked salmon
  • 2 tablespoons light cream cheese
  • 1 pinch of black pepper
  • 1 pinch of dill
  • 4 tablespoons of sunflower oil
  • 1 handful of chopped almonds

How to make Salmon Stuffed Mushrooms:

First of all, we gather all the things that you are going to use to prepare this Salmon Stuffed Mushrooms dish. And now we start to prepare it: first we chop the base that we have previously removed from the mushroom very well. We carefully extract it. If it is a bit difficult for us, we move the base to one side and another until it comes off completely or we can also facilitate it with the tip of a knife very carefully. Then chop the onion also finely chopped.

Once everything is finely chopped, put three tablespoons of oil of the type you like the most (I like it milder and therefore I will use sunflower), and fry the trunks of the chopped mushroom and also the onion over medium heat for 5 or 6 minutes, always so that what we are cooking does not stick and it is not overcooked. Then we also add about two tablespoons of cream cheese and a few pieces of chopped smoked salmon, and mix everything well.

Meanwhile we put an oven tray with the mushrooms sprayed in oil and cook them for 10 minutes at a temperature of 180 ºC. Once the mushrooms are roasted, we take them out of the tray and start filling them with the scrambled eggs that we had previously made with onion, cream cheese and salmon.

The best way to stuff these mushrooms is with a spoon to prevent the stuffing from coming out the sides. Finally, we put the mushrooms stuffed with salmon in the dish again and put it back in the oven for another 10 minutes at 180ºC so that they brown a bit.

Finally they are ready, all that remains is to remove the mushrooms stuffed with salmon  from the oven, with a teaspoon sink the filling a little and sprinkle some chopped almonds on top that will be very crispy and will give it a special point. Bon Appetite! Hope you like.
