Ingredients to make Salmon Skewers:

  • 1/2 fresh salmon without bone
  • 1 onion
  • 2 ripe tomatoes
  • 350 grams of large peeled prawns
  • 2 cubes of fresh basil
  • dried basil
  • 1 glass of white wine
  • salted
  • cherry tomatoes
  • olive oil

How to make Salmon Skewers:

  1. Cut the salmon into four pieces and divide each piece into three parts. It must be cut across.
  2. Chop the onion and put it to sauté in a casserole with hot olive oil.
  3. Next we cut the ripe tomatoes and add them to the onion. Sauté it and add the wine.
  4. Once the onion and tomato are sautéed, add the peeled prawns and cook until they release their juices.
  5. Add the salmon, with the fresh basil cubes and the dried basil, salt and let cook for three or four minutes, no more than this time as the salmon would overcook and when assembling the skewers they would break.
  6. Let cool, separate the salmon from the prawns and reserve the sauce.
  7. In a frying pan, sauté the cherry tomatoes.
  8. We proceed to assemble the skewers; first we will put a piece of salmon, then a shrimp and then the cherry tomato. So until the skewer is complete.
  9. We crush the sauce that we had reserved, put it on top and heat it in the oven for five minutes.
  10. Once hot, we serve
