Salmon Medallions Recipe

Ingredients to make Salmon Medallions:

  • 300 g. clean fresh salmon
  • 200 g. smoked salmon in large slices
  • 1 medium spring onion
  • 1 tablespoon of salt
  • 1 teaspoon pepper
  • 3 oil tablespoons
  • 2 tablespoons of capers
  • 1 teaspoon dill, 3-4 gherkins

How to make Salmon Medallions:

  1. Wash the fresh salmon and chop it on a board into very small pieces.
  2. Chop the white part of the spring onion, the capers, the gherkins and the dill.
  3. In a bowl, mix the chopped ingredients, season with salt and pepper and add the oil.
  4. Cover with transparent film and put in the fridge for 12 hours.
  5. Spread the smoked salmon slices on oiled aluminum foil so that they stick together as if they were a single slice.
  6. Place the marinated fresh salmon mince on top of the smoked salmon and form a tight roll.
  7. Put in the freezer for several hours.
  8. Cut into slices about a finger thick and put them in a dish.
  9. Brush the surface with oil and serve with dill, chive or mustard sauce, or with mayonnaise or pink sauce.
