Ingredients to make Pasta Salad with Salmon and Cheese:

• 200 grams of Macaroni

• 120 grams of smoked salmon

• 120 grams of feta cheese

• Basil

• 200 grams of black olives

• 16 tablespoons of extra virgin olive oil

• 8 tablespoons of wine vinegar

How to make Pasta Salad with Salmon and Cheese:

Cook the pasta in boiling water without salt. Once cooked, remove the hot water and wet it with cold water to cool it down. When it is cold, let the water drain well and place it in the dish where we are going to serve the pasta salad. Cut the smoked salmon into strips and say the feta cheese. We spread it over the pasta to continue with the preparation of the light salad. Sprinkle chopped basil to taste.

To make the vinaigrette for the pasta and smoked salmon salad, I used the “Empire” variety olives, as they are very tasty. We bone them and put them in the glass of the blender. Add the oil and vinegar and mix. Add the vinaigrette to the pasta, salmon and cheese salad and serve.
