Salad recipe with lamb’s lettuce and goat cheese

Ingredients to make Salad with canons and goat cheese:

• ½ package of canons

• 1 unit of Goat roller

• 100 grams of Bacon

• 1 pinch of ground almond

• 1 pinch of sugar

• 1 pinch of salt

• 1 splash of extra virgin olive oil

• 1 splash of Vinegar of Modena

How to make Salad with canons and goat cheese:

Here we have the ingredients for this cheese salad. We will use the sugar to slightly caramelize the grilled goat cheese. You can replace the ground almond with another dry fruit, for example walnuts or sunflower seeds. To prepare the goat roll, heat a frying pan and pour in a teaspoon of sugar. When lightly toasted, add the cheese. It is important that we cook it over high heat, to toast the outside without the cheese melting. In a couple of minutes it will be ready.

In a bowl, place the lamb’s lettuce (previously washed if they are not from the bag) and sprinkle the ground almonds on top. Place the grilled goat roll in the center.

In the same pan in which we have cooked the goat roll, fry the bacon strips, without adding oil, since they will be done in their own fat. When they are golden brown, pour them over the goat roll, trying to remove excess fat.

Then we salt the salad and add a splash of extra virgin olive oil and another of balsamic vinegar of Modena. We immediately serve the warm salad, to taste the warm cheese and bacon. We can serve it with toasted bread to spread the cheese or chop the goat roll and stir the salad well. I served it as a starter for this mushroom soup with cheese, what a wonderful menu!
