Salad recipe with figs and goat cheese

We bring you a vegetable delicacy worthy of a royal table: a salad of figs and goat cheese with almonds. Simply exquisite and very refreshing!

During the holiday season, the star dishes on the table are usually heavy, which is why it is essential to add a salad to the menu. Yes, salads are the perfect balance at the Christmas or New Year’s table. Why? The reasons are many: its excellent presentation and color, freshness, balance in flavors and textures; and also promote digestion.

The fresh fig salad is magnificent for its sweet and sour taste thanks to the combination of ingredients such as figs, spinach, goat cheese and almonds. A taste tour of textures and flavors! A perfect dish for appetizer or companion.

Ingredients to make Fig and Goat Cheese Salad:

For the salad:

• 8 slightly ripe figs

• 55 grams of goat cheese (fresh or not)

• 5 almonds or walnuts

• 1 bunch of arugula

• 1 bunch of fresh spinach

For the vinaigrette:

• ½ teaspoon Dijon mustard

• 1 teaspoon balsamic vinegar

• 50 milliliters of juice or lemon juice

• 1 tablespoon of cane honey (molasses of paper or piloncillo)

• 3 tablespoons olive oil (preferably extra virgin)

• ½ teaspoon of salt

• 1 pinch of black pepper

How to make Fig and Goat Cheese Salad:

Prepare the ingredients for the fresh fig salad:

1. Wash and dry the figs carefully. Remove the stem of the fruit and cut them into 4 parts.

2. Wash and drain the arugula and spinach well. Chop them with your hands if they have very large leaves.

3. Chop the walnuts.

4. Cut the goat cheese or crumble it with your hands.

Arrange the dressing ingredients on the table: mustard, balsamic vinegar, lemon juice, molasses, salt, and a pinch of freshly ground black pepper. Use a small bowl to prepare the mixture.

If you prefer, you can make a homemade fig jam to dress the salad with goat cheese instead of this vinaigrette. Add the oil gently, beating lightly by hand until you get a homogeneous texture. In a salad bowl or large bowl, add the arugula and spinach leaves. Mix carefully. Top with the figs, walnuts and coarsely crumbled goat cheese. Season with the vinaigrette.

Tip: You can add salt and pepper, if you consider it necessary.
