We point out that these potatoes are not fried, they are baked, but their flavor is delicious thanks to the aromatic herbs. Ingredients to make Rustic Potatoes:

• 1.2 grams of red potatoes

• 2 cloves of garlic

• 1 tablespoon dried oregano

• 2 sprigs of fresh thyme

• 100 milliliters of olive oil

• 1 pinch of freshly ground black pepper

• 1 pinch of flake salt

How to make Rustic Potatoes:

To make the recipe for quick rustic potatoes, first wash the potatoes, removing any traces of soil. Then, add them to a large pot covered with water with a little common salt and bring to a boil. Boil for 10 minutes.

Tip: in this step you should not peel the potatoes.

Drain the water and let the potatoes warm so you can handle them. Also peel the garlic cloves and chop the fresh thyme or simply remove the leaves, they are the ones we will use for the maceration. You can use dried thyme if you don’t have fresh.

Put the olive oil, thyme, oregano and minced garlic in a large bowl. Stir well. Put the potatoes in the maceration liquid and coat them well with the help of a spoon. Let them macerate while you preheat the oven to 200ºC. Once the oven is very hot, line a tray with paper and spread the potato wedges on it. Don’t crowd them so they cook well. And, if you have leftover liquid from the maceration, you can brush the potatoes with the leftover liquid. Bake with top and bottom heat at 200ºC for 18-20 minutes or until golden brown.

Sprinkle the homemade rustic potatoes with some freshly ground black pepper and flaky salt. Serve immediately piping hot!
