Ingredients to make Rustic Cauliflower Soup:

  • 1 bunch of cauliflower.
  • 3 garlic cloves.
  • 2 branches of long onion or green onion.
  • 3 tablespoons olive oil.
  • 2 cups of whole milk.
  • Salt of fine herbs (mixture of laurel, thyme and dried oregano).

How to make Rustic Cauliflower Soup:

  1. Prelist all the ingredients.
  2. Cut the long or green onion into thin pieces.
  3. In a deep pot add the long onion or green onion and sauté it
  4. Cook the cauliflower in boiling water until it is soft, once cooked, remove from the heat and cut with the knife as thin as possible.
  5. Add the chopped cauliflower to the pot where we have the long or green onion and add the herb salt, leave to preserve for approximately ten minutes.
  6. Add the milk and bring to a boil. Leave to keep for about 5 to 10 minutes. With a hand whisk, mix until all the ingredients are dissolved.
  7. Serve the rustic soup with a splash of olive oil on top.
