Romeritos with mole recipe

The romeritos with mole and shrimp cakes are one of those traditional dishes that are usually served on festivities such as Christmas or Lent. we share the step-by-step recipe for Mexican romeritos.

Ingredients to make Romeritos with mole:

  • 1½ kilograms of Romeritos
  • 500 grams of dried shrimp
  • 4 tablespoons of broad bean powder
  • 5 units of Eggs
  • 4 tablespoons powdered shrimp pulp
  • 500 grams of potatoes
  • 1 kilogram of No pales
  • 1 kilogram of Mole
  • 1 liter of Oil
  • 200 grams of salt

How to make Romeritos with mole:

  1. The first step to prepare the romeritos con mole is to gather all the ingredients.
  2. We clean the rosemary. To do this, we remove the thick stems and those that have roots, and wash those several times to remove any soil they may contain.
  3. Then, we cook them with a little salt and a pinch of carbonate. Once cooked, let them drain.
  4. Wash and cook the potatoes.
  5. Once cold, we remove the skin and chop them into cubes. We slice the no pales into strips and put them to boil with a pinch of carbonate.
  6. Soak the shrimp in a little water to remove the salt. Boil four cups of chicken broth in the saucepan where we will prepare the romeritos with mole.
  7. When it boils, add the mole paste, dissolve it and let it boil over low heat. You have to move it to prevent it from sticking to the bottom of the pan.
  8. Once the mole has seasoned, for approximately 20-30 minutes, we proceed to add the romeritos.

  12. On the other hand, we separate the whites from the yolks and proceed to beat the whites to the point of nougat. Later, we add the yolks one by one.
  13. Then we add the bean powder little by little, the shrimp powder and the teaspoon of baking powder.
  14. Immediately, we place a frying pan over high heat on the stove, add oil and, once the oil is hot, we proceed to fry the shrimp pancakes. For this we put portions of a tablespoon.
  15. Let them drain on absorbent paper and then add it to the mole with the romerito
  16. We let it boil a little, only until the shrimp pancakes are integrated into the romeritos with mole and we proceed to serve.
