Roasted Tomato Soup Recipe

Ingredients to make Roasted Tomato Soup:

  • 20 tomato(s) halved
  • 4 tablespoon(s) chopped basil
  • 5 garlic clove(s)
  • 2 1/2 cup(s) white wine
  • 1 1/2 cup(s) water
  • 1 caluga(s) chicken broth
  • 6 tablespoon(s) olive oil
  • Salt and pepper to taste

How to make Roasted Tomato Soup:

  1. Preheat the oven.
  2. Put the tomatoes in a bowl with the split side up, sprinkle with garlic, basil and drizzle with olive oil.
  3. Bake 50 minutes and peel. Brown the shallots, add the tomatoes, the wine, water and chicken broth.
  4. Bring to a boil, lower the heat and cook for approximately 20 minutes, season with salt and pepper.
  5. Process and serve garnished with basil leaves.
