Ingredients to make Roasted Tomato Soup:
- 20 tomato(s) halved
- 4 tablespoon(s) chopped basil
- 5 garlic clove(s)
- 2 1/2 cup(s) white wine
- 1 1/2 cup(s) water
- 1 caluga(s) chicken broth
- 6 tablespoon(s) olive oil
- Salt and pepper to taste
How to make Roasted Tomato Soup:
- Preheat the oven.
- Put the tomatoes in a bowl with the split side up, sprinkle with garlic, basil and drizzle with olive oil.
- Bake 50 minutes and peel. Brown the shallots, add the tomatoes, the wine, water and chicken broth.
- Bring to a boil, lower the heat and cook for approximately 20 minutes, season with salt and pepper.
- Process and serve garnished with basil leaves.
