Roasted Pepper Salad with Tomato and Onion Recipe

Ingredients to make Salad of roasted peppers with tomato and onion:

• 2 units of Tomato

• 3 units of red peppers

• 1 unit of Onion/scallion

• 1 pinch of salt

• 1 jet of olive oil

To decorate:

• 6 units of black olives

How to make Roasted Pepper Salad with Tomato and Onion:

We gathered all the ingredients to prepare the Roasted Red Pepper Salad. First, wash the peppers and remove the central stem along with the seeds, being careful not to break the pepper.

Arrange the peppers in a baking dish lined with foil, smear them with olive oil and roast the peppers in the oven at 140ºC for approximately 2 hours. After the first hour of cooking, we take them out and change them from side to side.

Once cooked, remove the skin from the peppers being careful not to leave any pieces. Cut them into strips and place them in a salad bowl along with the cooking juices.

Add the onion cut into thin strips and stir. If you prefer, you can also roast the spring onion in the oven, adding it whole halfway through cooking the peppers.

Peel the tomato and cut it into not too small squares, as indicated in the image. Mix it with the peppers and add salt and plenty of olive oil.

Tip: Tomato is an antioxidant ingredient, rich in potassium, low in fat and perfect for helping us digest.
