During the hot months when you want to eat something light and fresh, we can make a multitude of fruit salads, such as the fresh salmon salad with fruit.
We have prepared a salad of roasted peaches and ham, accompanied with mozzarella cheese, arugula and a very tasty dressing with fresh mint and lemon. The flavor and texture of roasted peaches combined with mozzarella and Serrano ham make this a star salad for summer days. Don’t miss it!
Ingredients to make Roasted Peaches and Ham Salad:
- 4 Peaches
- 6 slices of Serrano ham
- 1 piece of Mozzarella
- 200 grams of arugula
For the dressing
- 3 tablespoons of olive oil
- 1 tablespoon lemon juice
- 1 handful of mint
- 1 pinch of salt
- 1 pinch of ground black pepper
How to make Roasted Peaches and Ham Salad:
We gathered all the ingredients to prepare the Roasted Peaches and Ham Salad. Peel the peaches, cut them in half, remove the bone and put them in the oven at 200ºC with a drizzle of olive oil. Let them cook for 20 minutes.
While the peaches are roasting, prepare a dressing with lemon juice, olive oil, a little salt, a little ground black pepper and minced mint.
We add the arugula to the dressing and stir so that it is well impregnated and we can continue with the preparation of the fruit salad.
We take the peaches out of the oven, wait for them to cool down and place them in a bowl or salad bowl together with the mozzarella. If you have the opportunity you can also roast the peaches on the barbecue.
