Roasted grouper with anchovy sauce

Ingredients to make Roasted Grouper with Anchovy Sauce:

  • 1 kilo of grouper in slices
  • 1 glass of olive oil
  • 1 tablespoon white wine vinegar
  • 200g margarine
  • 6 salted anchovy fillets
  • 2 eggs
  • 2 bay leaves
  • 1 bunch of parsley
  • peppercorns
  • salted

How to make Roasted Grouper with Anchovy Sauce:

  1. We clean the grouper, gut it, wash it very well and marinate it for 3 hours in a marinade.
  2. The marinade is prepared as follows: manually beat a glass of oil with the 2 bay leaves, the parsley, the peppercorns and a tablespoon of vinegar.
  3. Crush the boneless anchovy fillets in a mortar with the margarine until they form dough.
  4. Boil the eggs for 10 minutes, extract the cooked yolks and add them to the preparation made with the anchovy and margarine.
  5. If necessary add a little oil until you get a creamy sauce.
  6. Remove the fish from the marinade and grill it for about 5 minutes on each side.
  7. We serve on a platter, accompanied by the anchovy sauce in a separate container so that the diner can serve what he wants.
