Roasted eggplants with apples are a delicious recipe that we share. You can serve this dish of roasted aborigines with apple as a starter or as a main course according to your tastes.
Ingredients to make Roasted Eggplant with Apple:
- 1 large eggplant
- 1 splash of olive oil
- ¼ unit of red pepper
- 1 pinch of Salt and Pepper
- 1 pinch of granulated Shallot
- 1 red apple
- 1 Lemon (juice)
- Powdered sugar
- 1 pinch of Cinnamon powder
- 1 pinch of powdered ginger
- 1 handful of lemon grass
- Dressing
- 50 milliliters of olive oil
- 1 teaspoon of wasabi paste
- 1 teaspoon of balsamic vinegar
- 1 teaspoon of soy sauce
How to make Roasted Eggplant with Apple:
- We will start by cutting the peduncle and the curved parts of the aborigine, then peel it and cut it into two halves as seen in the photo.
- Take advantage and chop, without peeling, the pieces that have been set aside.
- Heat a frying pan with a little olive oil and fry the chopped aborigine along with a few strips of red pepper.
- Season this with salt, pepper and the granulated shallot.
- Continue cooking until the vegetables are done and slightly crisp, turn off the heat and keep warm.
- Next, discard the core of the apple, without peeling it, and cut the fruit into thin slices. Leave these sheets in water with lemon.
- To make the dressing, mix everything on the list until well combined.
- Taste and correct the seasoning if necessary, adding more of any of the ingredients. The idea is to leave a sauce with an intense flavor.
- Paint the aborigines split in half with this dressing and reserve.
- Recover the apple slices, drain and sprinkle them with a little icing sugar mixed with cinnamon and ginger.
- Go stirring the apple with your hands so that they are well impregnated with these ingredients.
- With everything ready, place the eggplant halves on a tray or baking dish and cover with the apple slices.
- Spray with a little oil and cook at 200ºC for about 8-10 minutes.
- Place the grill option if you have it available.
- To present the Apple Roasted Eggplant Plate, place a portion of the stir-fry with peppers on one side and one of the apple eggplant halves on the other.
- Add a few strips of slightly cooked lemongrass last and if you want, you can burn the apples a little with a kitchen torch.
