Roasted Chicken Croquettes Recipe

Ingredients to make Roasted Chicken Croquettes:

  • 500 grams of Chicken
  • 1 unit of Onion
  • 300 milliliters of olive oil
  • 600 milliliters of milk (2½ cups)
  • 2 tablespoons of flour
  • 1 pinch of salt
  • 1 pinch of ground nutmeg
  • 1 pinch of ground black pepper
  • 1 unit of Egg
  • 200 grams of breadcrumbs

How to make Grilled Chicken Croquettes:

We gather all the ingredients to prepare the roasted chicken croquettes. Place the skinless chicken in a baking dish, season with salt and pepper, add a little olive oil and put it in the oven at 180ºC for 25 minutes .

You can also make this recipe for roasted chicken croquettes if you have leftover meat from having prepared, for example, baked chicken with potatoes and onion. Finely chop the onion and sauté it in the pan with a little olive oil. Let it cook for 3 minutes. Once cooked,  shred the chicken, remove the bones and add it to the fried onion. We put a little salt and pepper, and let it cook for 3 minutes.

Add the flour, let it cook for 2 minutes, and add the milk little by little until the dough of the chicken croquettes thickens.

Add a little salt, pepper and ground nutmeg. Without stopping stirring the dough, let it cook until it does not stick to the pan (approximately 15 minutes).

Tip: If the dough is too liquid, you can add more flour and vice versa.

Once the dough for the roasted chicken croquettes is formed, let it cool down a bit, and  form the croquettes with the help of 2 spoons, or with your hands. Coat the roasted chicken croquettes with beaten egg and breadcrumbs, and fry them in plenty of hot oil until golden brown. Once fried, place them on kitchen paper to remove excess oil.

These roasted chicken croquettes can be prepared as a starter, along with other appetizers such as fish and prawn skewers or savory salmon crepes.
