Ingredients to make Roast beef with sauce:
- 1 chopped onion
- 1 lemon, juice
- 2 kilos of high loin
- 2 tablespoons of lard
- 500 grams of meat trimmings
- 1 pinch of salt
- 4 drops of Perry sauce
- 1 glass of vermouth
How to make Roast beef with sauce:
- The fat skin is lifted from the upper back and it is covered again, wrapping it with the hand.

- It is placed in a baking dish with a bed of meat trimmings.
- Spread everything with lard.
- It goes into the oven very strong, for forty minutes.
- Halfway through cooking it is turned over and sprinkled with its own juice and left to finish.
- Once the time is up, remove it and reserve it in a covered saucepan.
- Remove all the fat from the juice and add water, letting it cook for fifteen more minutes, slowly.
- Strain and keep warm.
- The skin is removed from the loin, and it is carved into thin slices.
- Sauce: to the previous juice, add the onion, vermouth, lemon juice and Perry sauce.
