- 2 slices of salted ham

How to make river trout with salted ham:
- Clean the trout well, if they haven’t done it at the fishmonger (save the remains for the cat if you have them, they like them a lot), and let them drain.
- Put the flour on a plate. Heat the oil in a frying pan. While it’s heating:
- Salt the trout on the outside.
- Put inside each trout a slice of salted ham. Close each one with a toothpick so that they open. Flour them.
- Fry the trout, so that they are golden brown on both sides, making sure that they do not break when turning them over.
- Put them on a plate lined with kitchen paper to remove any excess oil. Serve freshly cooked with a slice of lemon and a little fried tomato or mayonnaise.
