Risotto recipe with chicken livers and ham

Ingredients to make Risotto with chicken livers and ham:

  • For 4 people:
  • 300 gr. of rice
  • 300 gr. of chicken livers
  • 150 gr. of ham
  • 100 gr. of Gran Capitan cheese
  • 1 onion
  • 1 green pepper
  • 2 garlic cloves
  • 2 l. chicken broth
  • 1 glass of white wine
  • extra virgin olive oil Hojiblanca
  • Salt
  • Pepper
  • parsley

How to make Risotto with chicken livers and ham:

  1. Finely chop the onion and pepper and brown in a wide, low casserole with oil.
  2. Also chop the garlic cloves, add them and season.
  3. When it starts taking color, clean, chop the chicken livers, add salt and pepper and add them to the pan.
  4. Sauté a bit, add the white wine and rice and mix well.
  5. Pour in the broth little by little and cook for 15 minutes, stirring constantly.
  6. Cut the cheese into cubes and add it.
  7. Mix until melted.
  8. Serve the risotto in a large dish, decorate it with parsley and accompany it with the ham.
  9. When you make a risotto, the liquid (which must be about to boil) must be incorporated little by little and without stopping stirring.
  10. In this way, the rice will cook, absorbing the liquid little by little and it will form a cream.
