Risotto recipe

Ingredients to make Risotto:

  • 1 medium onion unit
  • 1 cup of rice
  • 150 grams of Mushrooms
  • ½ unit of Italian zucchini
  • ¼ cup dry white wine
  • 50 grams of grated Parmesan cheese
  • 150 grams of mozzarella cheese
  • 1 jar of vegetable broth

How to make Risotto:

  1. Cut the onion into small cubes. Then, you will have to fry it in 3 tablespoons of vegetable oil. When it’s about to be done, add the rice and finish frying without stopping stirring.
  2. As the risotto is made, you will have to add the previously washed and sliced ​ mushrooms. After 40 seconds or a minute after incorporating the mushrooms, add the wine and let it reduce.
  3. Then add the squash cut into small cubes and the cup of vegetable broth. When the broth has reduced by half, add the Parmesan cheese, salt and pepper to taste.
  4. When the consistency is thick and everything is well cooked, add the mozzarella cheese and remove the risotto from the heat. Serve the risotto immediately, accompanied by a not very dry white wine.
