Ingredients to make Risotto:
- 1 medium onion unit
- 1 cup of rice
- 150 grams of Mushrooms
- ½ unit of Italian zucchini
- ¼ cup dry white wine
- 50 grams of grated Parmesan cheese
- 150 grams of mozzarella cheese
- 1 jar of vegetable broth
How to make Risotto:
- Cut the onion into small cubes. Then, you will have to fry it in 3 tablespoons of vegetable oil. When it’s about to be done, add the rice and finish frying without stopping stirring.
- As the risotto is made, you will have to add the previously washed and sliced mushrooms. After 40 seconds or a minute after incorporating the mushrooms, add the wine and let it reduce.
- Then add the squash cut into small cubes and the cup of vegetable broth. When the broth has reduced by half, add the Parmesan cheese, salt and pepper to taste.
- When the consistency is thick and everything is well cooked, add the mozzarella cheese and remove the risotto from the heat. Serve the risotto immediately, accompanied by a not very dry white wine.
