Ripe Banana and Cheese Cake Recipe

If you want to take advantage of some ripe bananas that you have at home and you don’t know what to do with them, don’t miss this delicious ripe banana and cheese cake that we are going to teach you how to prepare.

In this case we are going to use 3 different cheeses to make this  homemade sweet plantain cake: mozzarella, Latin type cotija cheese and grated cheese for gratin, but you can use others that you like more. The ideal is to mix some softer cheese and another more salty so that they contrast with the sweet flavor of the bananas.

Ingredients to make Ripe Banana and Cheese Cake:

  • 2 Eggs
  • 2 large ripe bananas
  • 1 teaspoon of baking powder chemical yeast
  • 40 grams of Panela or sugar
  • 2 tablespoons of milk
  • 3 tablespoons of ointment butter
  • 4 tablespoons of wheat flour
  • 100 grams of Latin cheese
  • 100 grams of mozzarella cheese
  • 1 handful of grated cheese to gratin

How to make Ripe Banana Cheese Cake:

To start preparing this ripe banana and cheese cake, the first thing to do is preheat the oven to a temperature of 175º C. Next, if we have a food processor, we place the peeled bananas and the panela or the sugar inside and grind a little at low speed so that the ingredients are mixed but they are not super crushed and the pieces can be seen in the homemade sweet plantain cake.

If not, you can do it by hand by mashing the peeled ripe bananas and mixing them well with the sugar or panela.

Once crushed, add the other ingredients to the food processor (or failing that we will do it manually) except the cheeses and beat them well until you get a homogeneous mass.

Once we have the banana cake batter made, we grate the cheeses and mix everything together.

On the other hand, we grease an ovenproof mold with a little butter or oil and flour it too.  And we add the mass of the ripe banana cake evenly. Now sprinkle a little grated cheese on top and put the ripe banana cake in the oven for about 45 minutes. To check if the ripe banana and cheese cake is done, insert a knife.
