This potato stew with meat is very popular with children (and adults) and has all the vitamins, carbohydrates and proteins we need in one dish. Chorizo, a typical Spanish product, gives a very special flavor to this Riojan recipe. Ingredients to make La Rioja potatoes with meat:
- 1 onion
- 1 green pepper
- 2 pieces of fresh Chorizo
- 1 bay leaf
- 120 grams of pork bridle
- 1 dessert spoon of sweet paprika
- 3 garlic
- 1 dried chili or cayenne
- 1 pinch of salt
- 1 splash of olive oil
- 4 potatoes
How to make La Rioja potatoes with meat:
- We gather all the ingredients to prepare the Rioja-style potatoes with meat.
- We make a sauce with the onion and the pepper cut into squares.
- Cook over medium heat for 5 minutes, transfer the sauce to a blender glass and mix with a little water.
- In the same pot, add a little more oil and fry the garlic with the cayenne pepper or chili until the garlic is golden.
- We can leave the garlic with or without skin, as you like (remember that we will remove them later before serving the Rioja-style potatoes).
- Add the sliced chorizo, the chopped pork and the potatoes in wedges. Add a little salt and let the meat brown.
- At this point, we add the sauce and sweet paprika and mix our Rioja-style potatoes with chorizo and meat.
- Cover with water, add the bay leaf sprig and cook for approximately 20 minutes, until the potatoes are tender.
