Rioja-style potatoes with chorizo ​​recipe

Typical country dish, from La Rioja and that today is spread throughout the Spanish geography for being a tasty and cheap dish, made up of two star ingredients, potatoes and chorizo. Making them at home is much easier than it seems, so there are no excuses. Keep reading and prepare these incredible Rioja-style potatoes.

Ingredients to make La Rioja potatoes with chorizo:

  • 1 kilogram of potatoes
  • 150 grams of Chorizo
  • 1 piece of Onions
  • 5 garlic cloves
  • 1 pinch of salt
  • 1 jet of Oil
  • 1 piece of chorizo ​​pepper
  • 1 bay leaf
  • 500 milliliters of Water

How to make La Rioja potatoes with chorizo:

  1. First we prepare all the ingredients that we are going to need so that we do not forget anything and make sure that we have everything we need to cook these delicious Rioja-style potatoes.
  2. We start by cutting half an onion, chop it and do the same with the garlic cloves. In a casserole we put a jet of oil, heat it and add the onion and minced garlic to fry.
  3. When the sauce begins to brown, add the chorizo ​​​​cut into thick slices, as shown in the image.
  4. Once the sauce with the chorizo ​​​​is done, add the potatoes, which will be broken instead of cut since this is the way for the starch to come out of the potato and thicken the remaining broth.
  5. Next, add the bay leaf and the washed chorizo ​​​​pepper to the potatoes.
  6. Finally, we will add the water and it will be salted.
  7. Then we will keep over medium heat until the potatoes are ready, about 20 minutes or so.
