Rin ran cod recipe

The rin ran is a stew that is prepared with tuna, potatoes and peppers, but as with all dishes, these are acquiring new ingredients and new ways of cooking. The recipe that we propose consists of a Murcian cod rin ran, a humble dish that is prepared with few ingredients. The rin ran from Jaén, from Cazorla, among others, is also known.

Ingredients to make Rin ran of cod:

  • 1 onion
  • 2 ñoras or dried chorizo ​​peppers
  • 250 grams of cod
  • 1 lemon
  • 1 dessert spoon of sweet or hot paprika
  • 1 splash of olive oil
  • 1 pinch of salt

How to make cod rin ran:

  1. To start with the cod rin ran recipe, you must first desalt the cod. To do this, you must soak it for 48 hours; you must also change the water every 6-8 hours.
  2. Wash and dry the peppers. Next, place a frying pan over low heat with a drizzle of oil and add the chorizo ​​peppers so that they cook over low heat, they should be tender, but they should not be toasted or burned. When they are tender, remove them and let them cool. Then, open them, remove the seeds and cut the meat of the pepper into very small pieces.
  3. Trick: you can find boats with the meat of the Nora or chorizo ​​pepper.
  4. When the cod is salted, remove the bones and skins, it should be very clean.
  5. In the same pan where you cooked the peppers, cook the Murcian cod.
  6. Trick: let the cod release the water.
  7. Chop the onion and add the very finely chopped onion and pepper to the pan. Next, add a good splash of olive oil, a splash of lemon and a teaspoon of paprika, stir and let it cook.
  8. Tip: the paprika can be spicy or half and half. This step is where you can add the Nora meat that they already sell.
  9. Let everything cook together with a good jet of oil, it should not be dry. Stir all the ingredients and, in turn, chop so that everything is mixed and the cod acquires the flavors.
  10. Taste and rectify salt if necessary. You can also add a pinch more paprika if you like. The Murcian ran rin is ready!
