Rice with vegetables recipe

Ingredients to make Rice with vegetables:

  • 2 tablespoons of corn oil
  • 3 tablespoons unsalted butter
  • 1 cup white onion, chopped
  • 1 tablespoon of salt
  • 1/2 cup tomatoes, peeled and chopped
  • 1 cup celery, chopped into rounds
  • 1 1/2 cups paprika, diced
  • 1 1/2 cups carrot, finely chopped and precooked
  • 2 cups of peas or a can
  • 1/2 cup of tomato sauce
  • 1 1/2 cup green beans, chopped
  • 3 cups of water from cooking the vegetables
  • 2 cups of washed rice

How to make Rice with vegetables:

  1. In the pot in which the preparation will take place, heat the butter and oil and fry the onion until it is transparent.
  2. Add the tomato, celery and paprika. Cook for 5 minutes.
  3. Add the peas, green beans, carrot, and cook, stirring occasionally, for another 10 minutes.
  4. Separately, mix the water with the tomato sauce and salt. Add to vegetables and over high heat bring to a boil.
  5. Add the rice and continue cooking over medium heat until small holes appear on the surface.
  6. Cover and simmer over low heat until the rice is dry. Serve hot
