Rice with Vegetables and Serrano Ham Recipe

Ingredients to make Rice with vegetables and Serrano ham:

  1. 1 glass of Rice of the variety that we prefer
  2. 1 piece of Ham (better Iberian)
  3. 1 handful of mixed frozen vegetables, stew or salad
  4. 2 glasses of chicken broth (or water + half a bouillon cube)
  5. 1 teaspoon food coloring (I use turmeric)
  6. 1 tablespoon of olive oil
  7. 1 pinch of salt

How to make Rice with vegetables and Serrano ham:

  • First of all, the first thing we have to do to prepare this rice with vegetables and Serrano ham is to put a pan with a little oil, and brown the onion.
  • When it begins to be tender, add the frozen vegetables and stir.
  • When the vegetables begin to soften a bit, add the Serrano ham and stir again.
  • After a couple of minutes, add the rice and the coloring. Sauté, mix well. We can also add some salt to the rice with vegetables, but without going overboard as the ham and broth are already salty.
  • Add the chicken broth, covering all the rice with Serrano ham (as well as double the amount of rice or a little more), and let cook over medium-low heat, with the lid but not completely closed, about 15 minutes (depending on the type of rice. The time it says on the package).
  • The last few minutes we can leave the rice with vegetables and ham uncovered so that all the liquid evaporates. On the contrary, if we see that it is too dry before time, we will add more water or broth. In any case, to know that the rice is ready, it is best to taste it.
  • When we have the rice with Serrano ham ready, remove from the heat and cover with a cloth. Let stand five more minutes to finish evaporating all the liquid.
