Rice with Vegetables and Chorizo ​​Recipe

Ingredients to make Rice with vegetables and chorizo:

  1. 1 onion
  2. 4 green peppers
  3. 1 carrot
  4. 3 garlic cloves
  5. 2 bay leaves
  6. sweet paprika
  7. oregano
  8. Thyme
  9. 1 glass of white wine
  10. 2 glasses of meat broth
  11. 1 glass of rice
  12. chorizo ​​on a string
  13. olive oil
  14. salt and pepper to taste
  15. 2 small ripe tomatoes

How to make Rice with vegetables and chorizo:

  • Cover the bottom of the pan with olive oil. Chop the garlic, the onion, the peppers, and the carrot and add the sweet paprika, the thyme, oregano, and the bay leaves to the saucepan. Cut the chorizo ​​into small pieces and also add it to the saucepan.
  • Mix everything well and fry for about 10 minutes over medium-high heat. Stir the vegetables a bit so they don’t stick to you.
  • Add the two tomatoes previously passed through the blender.
  • When the tomatoes have lost water, add the glass of white wine and wait for the alcohol to evaporate.
  • On the other hand, we boil the rice for 10 minutes, this depends a little on the type of rice, follow the instructions that the rice producer puts in order to know the appropriate time. Also choose a suitable type of rice to make paella.
  • Then we put the rice in the drainer and give it cold water so that it loses the excess starch and the rice is separated.
  • Immediately afterwards, add the rice to the saucepan along with two glasses of meat broth and adjust the salt.
  • We wait for the broth to reduce. We have it on medium-high heat (7-8) for approximately 30 minutes and that’s it. The chorizo ​​is better if it is a little spicy, you can also chop the chorizo ​​to make it a little better and easier to eat.
