Rice with shrimp and coconut recipe

Ingredients to make Rice with Shrimp and Coconut:

  • 2 cups of rice
  • 4 tablespoons of Oil
  • 1 pound of shrimp
  • 1 unit of pepper
  • 1 unit of onion
  • 1 clove garlic
  • 1 unit of tomato
  • ½ cup coconut milk
  • 4 cups of Water (960 milliliters)
  • 1 cup of grated coconut (100 grams)
  • 1 pinch of Salt and Pepper

How to make Rice with Shrimp and Coconut:

  1. To start preparing this rice with shrimp, you must start by making a stir-fry of shrimp with onion and garlic. Chop these last two finely and also add a little salt and pepper.
  2. When the onion begins to turn transparent, add the pepper along with the tomato. You can finely chop them into larger pieces according to taste. Stir everything and let it cook for a couple of minutes.
  3. Next, add the coconut milk and grated coconut to the pan. Stir everything to distribute the flavors and add the rice to the cook.
  4. Add the water and cook the rice in the traditional way. Bring to a boil, then lower the heat and cover until the rice dries out. If the rice is still too hard, add a little more water, but it shouldn’t be necessary.
  5. Serve the rice with shrimp and coconut and enjoy this exotic flavor accompanied with a few slices of plantain and an avocado salad.
