Ingredients to make Rice with ribs:
- ½ pork rib
- 1 red pepper
- 1 green pepper
- 1 glass of rice
- 1 pinch of saffron
- 1 sprig of rosemary
- 1 pinch of pepper and salt
- 2 glasses of chicken broth
- Bacon (optional)
- 1 splash of white wine
How to make Rice with ribs:
- We start by getting the ingredients ready. Then, chop the ribs and season all the pieces with salt and pepper. Reserve.
- We also finely chop the peppers and the bacon in case we want to use it, although it is optional, the bacon gives the rice a great flavor.
- Brown the ribs in the same pan where we will prepare our sticky rice. When they are, we remove them and reserve.
- In the same casserole, fry the pepper until it browns, then add the bacon and sauté the whole for a few more seconds.
- We incorporate the ribs and a few strands of saffron, we also add a splash of white wine and when it reduces, we incorporate the rice.
- Stir well and add the chicken broth. Remember that the proportion for cooking rice is twice the liquid of rice, either broth or water. In my case, I always do a little more to make it sweet.
- Once we see that it boils, we reduce the flame to a minimum and let all the liquid be consumed. Once the broth is reduced, we check that the rice is already done and that’s it.
- Remember that you can leave the rice drier or brother to taste.
