Rice with Ratatouille and Egg Recipe

Rice is one of the most popular cereals in the world, because in addition to being cheap, it is a very versatile food, since it fits perfectly with multiple products. Among all of them, vegetables are one of the best options due to their high contribution of vitamins, minerals and fiber, among many other benefits. Likewise, if you have children at home and there is no way to get them to eat these foods that are so necessary for their proper development, surely with this recipe they will!

Lourdes Madrigal shows us, a simple step by step to learn how to prepare a rice volcano. In it, she introduces ratatouille of vegetables and decorates it with fried eggs, one of the children’s favorite dishes.

Ingredients to make Rice with ratatouille and egg:

  1. 600 grams of Rice
  2. 6 fried egg
  3. 1 clove garlic
  4. 1 pinch of Parsley
  5. ratatouille
  6. 1 onion
  7. 1 zucchini
  8. 1 Eggplant
  9. Ketchup

How to make Rice with ratatouille and egg:

  • Make the vegetable ratatouille with onion, zucchini, and aubergine and tomato sauce. To do this, the vegetables must be chopped to the same size, first sauté the onion and, when it is transparent, add the zucchini and aubergine. Finally, the tomato sauce is added. For more details, see the recipe for ratatouille vegetables.
  • Fry the minced garlic and, when golden, add the parsley and rice. Sauté, add a splash of white wine and reduce (this helps the grain not break). Then add the water to cook the rice.
  • Apart, and while the rice is cooking, fry the eggs and reserve them. If you want, you can make the fried eggs in the microwave to make rice with ratatouille and egg a healthier recipe.
  • To form the rice volcano, place the white rice in the shape of a bagel or volcano, in the middle introduce the ratatouille and on the edges the fried eggs.
